Here’s a THOUGHT, what if you had no beliefs, how would that feel? Each new situation would be met with no preconceived noti ons, like a blank canvas, no fear of outcomes. Maybe a belief is like a tool that you pick up now and again when you have a desired outcome and you need that bit of magical belief to get you there. What about knowing versus believing? Is “I know all is well” a nice feeling to have or is it just another belief? KNOWING has a different quality to it and comes from experience. It’s a constant. Beliefs are transient. What our society believes right now has changed dramatically in the last 100 years, and will change hugely in the next 100. SO, I invite you to stay open, and let go of it all, and pick it up when you need it. BELIEVE or not.. PAUL CONGDON, Publisher “I can belIeve anythIng provIded It Is IncredIble.” oscar WIlde

WIllIe sMIts restores a raInforest Biologist Willie Smits has devoted his life to saving the forest habitat of orangutans, the “thinkers of the jungle.” By piecing together a complex ecological puzzle, he has found a way to re-grow clearcut rainfo- rest in Borneo, saving local orangutans and creating a thrilling blueprint for restoring fragile ecosystems. He works at the complicated intersection of humankind, the animal world and our green planet. In his early work as a forester in Indonesia, he came to a deep unders- tanding of that triple relationship. He believes that to rebuild orangutan popu- lations, we must first rebuild their forest habitat, which means helping local people find options other than the short-term fix of harvesting forests to survive. His Masarang Foundation raises money and awareness to restore habitat forests around the world, and to empower local people. In 2007, Masarang opened a palm- sugar factory that uses thermal energy to turn sugar palms (fast-growing trees that thrive in degraded soils) into sugar and even ethanol, returning cash and power to the community and, with luck, starting the cycle toward a better future for people, trees and orangs. “I created the place Samboja Lestari, and the idea was, if I can do this in the worst place that I can think of, where there is really nothing left, no one will have an excuse to say, ‘Yeah, but…’ Everyone should be able to follow this.” www.masarang.org IndIgenous peoples’ land rIghts Recently, the Central African Republic became the first African nation to ratify the International Labour Organisation (ILO) Convention 169 – the only legally binding international law that recognises indigenous peoples’ land rights. It also protects their right to control their own de- velopment and maintain their identities, cultures, languages and religions. This historic action demonstrates the country’s commitment to its indigenous communities, included in its 4.5 million population, such as Aka Pygmies, who lead a semi-nomadic life in the heart of the tropical rainforests and are inextricably linked to them for their survival. Central African Republic’s ratification brings the total number of countries who have signed up, so far, to 21. declared by The Ecologist in 2001, to be a global leader in sustainable development with a substantial amount of its jungles remaining untouched. www.ilo.org www.survival-international.org Wave of boats A groundbreaking boat design is helping wheelchair users partake in water-based activities. Known as Wheelyboats, the ves- sels have been launched at fisheries, lochs, reservoirs, estuaries, rivers, canals and all sorts of other venues throughout the UK. Whether for the purpose of competitive an- gling, hobby fishing, family trips, bird wat- ching or just to experience the tranquillity of being alone on the water, the elderly and less-abled can now join in on equal terms with their more able-bodied counterparts. Handmade to order, the boats cater for any requirement, as well as being ‘chair operable’ so people can, if they choose, skipper at the helm without assistance. “Once on board, you’ve got access to the entire boat,” said Andy Beadsley of the Wheelyboat Trust, himself a wheelchair user and fly fishing instructor. “It provides less-abled people with a lot of indepen- dence for a variety of activities.” www.wheelyboats.org happIly ever after In July 2008, while travelling in Australia, Julie Gorman was diagnosed with Multi- ple Sclerosis. “To say this was an unex- pected event that completely changed my life is an understatement, but it was also one that definitely changed my life for the better. I adopted a healthy lifestyle, and have been receiving continuous chiro- practic care, from which I have had re- markable results. I also use visualisations, positive affirmations and NLP techniques to help me lead a happier, healthier life. This journey has also taken me on a spiri- tual path. People say that “to get what you want in life you must put the work in.” What I wanted was to be healthy and I put the research and effort in. As a result, I am not taking any medication, and I believe I am healthier now than I ever was. I found the strength within myself to get what I wanted and I want to help people find their strength to reach their goals and live their dreams. I believe that I am still on a journey, and that is to tell people about my story and help in any way I can. I want to make peo- ple become aware that we should question everything and that having a positive atti- tude and taking positive action can make a positive difference in our lives, whatever our circumstances may be.” Julie is now a qualified Life Coach and also a qualified Heal Your Life Workshop Leader, and is running powerful workshops and courses designed to motivate and inspire people to lead happy, healthy and successful lives. www.coachme.ie creatIve arts brIdge the age gap A London-based organisation is using peo- ple’s memories as building blocks for brin- ging different generations together through the creative arts. Age Exchange has been working for over 25 years with vulnerable and isolated elderly people to bring value to their memories, creating exhibitions, plays, documentary films, publications and other intergenerational projects. These workshops make use of older peo- ple’s memories with role-play and period artifacts, along with sound and film archive material. A school history lesson, for exam- ple, is suddenly made more real and tangible with first hand accounts of the past. “Reminiscences is the opportunity for people to share life stories and be valued for doing that,” says Malcolm Jones, arts and education officer for Age Exchange. “Inter- generational work is where people want to be at the moment, because there is a feel good factor,” he adds. “They are probably the most marginalised group now in society.” According to Malcolm, the purpose of this intergenerational work is not only to reach out to older people who are vulnerable but to educate the younger generation about the elderly rather than perpetuate stereotypes. “Media representation of old people is usual- ly negative,” he says, “or it is only when they are doing something eccentric like ‘85-year- old grandma does bungey jump’. But it is not representative of the community.” Age Exchange’s recent theatre project, To Care For, performed at Greenwich Theatre, was an entire play based on real life experiences from Londoners’ memo- ries of family, community and institutio- nalised care. People shared memories that were poignant and personal, from carers of Alzheimer’s victims, to family members who looked after elderly relatives. It was a fulfilling experience, reveals Dave Savill, Age Exchange’s director of arts and education: “To see older people getting on a stage, telling a story, acting to people, non- professional actors as they are, and getting them to that level where they could commu- nicate with an audience in a huge theatre, was enormously satisfying.” Age Exchange continue to bridge the gap between generations, with the very simple tool of reminiscences and their project work is currently travelling internatio- nally, including in Australia, New Zealand, China, Singapore, Malaysia, Japan and parts of Europe. www.age-exchange.org.uk

There is a fascinating study where a re- search group analyzed the journals of 180 people and graded them for happiness - ranging from least happy to most happy. 50 years later they checked up on this group and found that 90% of the happiest people were still alive at age 85 while only 34% of the least happy were still around (Journal of Personality and Social Psychology, 2001). One reason why this study is so fascina- ting is because this group of 180 people were nuns. Now, when I think of the life of a nun, happiness is not the first thing that pops into my mind. To me, the celibate, predictable, monastic life doesn’t conjure up images of happiness, yet some may think, “No stress, no kids, no money pro- blems and no husband; now that thought makes me happy.” What makes nuns a good study group is that they all live a similar lifestyle with similar economic status, marital status and stress levels. They don’t drink, smoke or contract sexually transmitted diseases. In the study, the only difference that emer- ged was their level of happiness. What is really interesting is that genetics did not effect the data; only happiness. Here are two examples of excerpts from their journals: Sister Cecilia wrote, “The past year, which I spent as a candidate studying at Notre Dame, has been a very happy one. How I look forward with eager joy to recei- ving the Holy Habit of Our Lady and to a life of union with Love Divine.” Sister Marguerite wrote, “My candidate year was spent in the mother-house, tea- ching. With God’s grace, I intend to do my best for our Order, for the spread of reli- gion and for my personal sanctification.” Sister Cecilia was still alive at age 98 and never sick a day in her life while Sister Marguerite suffered from a stroke at age 59 and died soon after. In another research project, thousands of elderly people (with an average age of 58) were given a short test measuring their habitual feelings of pleasure and well- being. They found that the 300 people that scored the highest were 30 times more likely to be alive 21 years later than the 200 that scored the lowest (Ronald Grossarth-Maticek - Self-regulation, Well- being and Health). Even though the test focused only on mental factors, it predicted longevity and future health more effectively than a much longer test on traditional risk factors such as genetics, lifestyle, smoking and diet. Other research shows that stronger posi- tive emotions such as “thrilled, “excited” and “delighted” have a greater effect on longevity than feelings such as “pleased” and “calm”. Given the level of happiness exhibited by Cecilia, we (with our exciting and thrilling lives) should be able to sur- pass even the happy nun’s longevity. It has also been found that happy people tend to have larger social networks and exhibit more resistance to disease, even if they have had more exposure to disease. Researchers took 276 people and exposed them to a rhinovirus (common cold). They found that the people who had many rela- tionships including family, neighbours, friends, church groups, hobby clubs and work peers were 4 times less likely to deve- lop a cold than those who had only a small number of social groups. The researchers found this to be true even if the subjects had other health factors to consider such as poor sleeping habits, low vitamin C intake, alcohol consumption and other such factors (Carnegie Mellon University, 2006). So, in conclusion, happiness and other positive emotions have more of an effect on your longevity than genetics, lifestyle, diet or smoking. Add a healthy lifestyle and a good attitude towards life and you can live a long and happy life. By the way, over half of the happy nuns were still living at age 94 vs. 11% of the unhappy ones. The sign your Sun was in at the moment of your birth does not determine who you are. It merely offers you useful information on how to most easily access what you chose to learn in this particular incarnation, as well as the tools and resources at your disposal. It is in reconnecting with what our core journey is fundamentally about that we fi nd true meaning and purpose in life. Although the Sun in each sign has a set of characteristics intrinsic to its nature, we each have a wide scope of possibilities and choices as to how to express these charac- teristics. Understanding and integrating our Sun sign in a conscious manner is a life long process for most of us, requiring us to embark on the Hero’s Journey, thereby, heeding the call to adventure. There are two main approaches to unders- tanding the characteristics of the Sun as it moves through the 12 signs of the Zodiac wheel: as a circular developmental pro-• cess from Aries, the first sign of the Zodiac, representing birth and the courage to launch into the unknown, to the last sign of Pisces, represen- ting the wisdom accumulated from the previous 11 signs. as a pair of signs in opposition to • each other, mirroring and seeking integration and balance. This is the approach I am going to use for the purpose of this article. sun In arIes The Ram. March 21st - April 19th Rules the Head Planetary Ruler Mars (Roman god of War) Aries is the first sign of the Zodiac and is in the element of Fire, which Jung equated with the Intuitive function. Like many of the mythological heroes, the Sun in Aries needs a valid quest. Archetypically, the Aries call to adventure is a search to find the inner animus and father, which requires courage, discipline and inner strength. Its natural competitive characteristics are an attempt to prove its inner potency which feels crucial to its survival. If the Sun in Aries is unconscious, blocked or disowned, it can manifest as overly aggressive, fearful and unwilling to take responsibility for its choices and actions in life preferring to bla- me others. In finding and owning its own authority within, the Sun in Aries takes on its true role as a natural leader and initiator, combining acute intellectual abilities with more primal instinctual drives. If your Sun is in Aries, you are likely to benefit from the freedom of open spa- ces in nature, setting and overcoming ‘age appropriate’ physical emotional or mental challenges and being innovative and spontaneous in one or more areas of your life. Opposite: sun In lIbra The Weighing Scales of Justice. Sept 23rd – Oct 22nd Rules the Kidneys Planetary Ruler Venus (Greek goddess Aphrodite) Libra is the opposite sign to Aries, repre- senting duality in contrast to Aries’ in- dividuality. It belongs to the element of Air, which in Jungian psychology is the Thinking function. Duality is, by nature, separative, enabling discrimination and de- finition. Archetypically, Libra is concerned with the human incarnate challenge of ba- lancing our intellectual ideals and concepts of perfect fairness and justice with the hu- man instinctual necessity to make choices for our survival. In contrast to the Aries ability to take action, Libra Sun often he- sitates, struggling with the fairness of the consequences of its choices. In its intrinsic duality, Libra Sun seeks relationship with others to discover who it is. However, the exchange it requires is mostly an ordered, intellectual one, finding emotional exchan- ges somewhat challenging in their chaos. If the Sun in Libra is unconscious, blocked or disowned it can manifest as avoidance in making any decision and/or taking action for fear of not being liked. When shining brightly, the Sun in Libra is a natural me- diator and diplomat, with a refined sense of beauty and balance. If your Sun is in Libra, you are likely to benefit from art, elegance and peaceful ease in your surroundings, intellectually pleasing friendships and space to think things through. Integration of the strengths from both signs The more primal impetuous energy of Aries can benefit from the mental detachment and refinement of Libra. In turn, Libra’s reluctance to move forward and assert its own needs can learn from Aries’ ability to courageously stand up for what it believes in, regardless of the opinions of others. sun In taurus The Bull. April 20th – May 20th Rules the Neck and Throat Planetary Ruler Venus Taurus is the second sign of the Zodiac and the first of the Earth signs, the Sensation function as described by Jung. Here, we are in the concrete realm of incarnation where spirit and mind are combined with a human body with physical requirements, pleasu- res and desires. Archetypically, Taurus is concerned with our enjoyment as humans of the desires and pleasures of being in bo- dily form, yet also remembering that our ultimate purpose and identity is connected and at the service of something greater. The Sun in Taurus is deeply connected to the earth realm through a recognition and respect for the beauty and rhythms of nature. At heart, the Sun in Taurus seeks and creates security, structure and stability. It enjoys peace, tranquillity and sensuality with a strong dislike for sudden unexpec- ted changes. If the Sun in Taurus is uncons- cious, blocked or disowned, it can measure its worth and security merely through its external possessions rather than through its inner strength and values. When in touch with its own inner value, the Sun in Taurus can easily create natural beauty, harmony, peace and stability in its surroundings. If your Sun is in Taurus, you are likely to benefit from a beautiful natural envi- ronment with a variety of creative means of expression, as well as a degree of structure in your life. Opposite: sun In scorpIo The Scorpion, Eagle, Phoenix and Snake. Oct 23rd – Nov 21st Rules the Genitals and Bladder Planetary Rulers Pluto (Roman god Hades – ruler of the underworld) and Mars Here, we descend from the visible, tan- gible, upper earthly world of Taurus to the invisible depth of the Scorpian unde- rworld. We are in the Watery territory of the Jungian Feeling function. Psychologi- cally, we are in the realms of the individual and collective unconscious. Archetypically, Scorpio is about trusting that in letting go of what is safe and familiar, we will re-dis- cover the hidden treasures of our authentic Soul self. Yet, it is only by fully incarna- ting in our physical bodies on this planet, through the earthy sign of Taurus, that we can safely descend into the underworld and discover the secrets of our soul and beyond, through Scorpio. When unconscious, blocked or disowned, the Sun in Scorpio can seek to have power over others rather than for others, for fear of humiliation and annihilation. At its highest, the Sun in Scorpio is fearless, diving to the deepest emotional depths in itself and with others, using its mediumistic skills like a scalpel to eradicate whatever is outworn and blocking new seeds from germinating. If your Sun is in Scorpio, you are likely to benefit from expressing your emo- tions through the creative arts as well as spending time near water. Integration of the strengths from both signs The integration of Taurus and Scorpio together can act as a morally courageous, physically grounded, emotionally deep and spiritually insightful transformative tool in this world and beyond.

AIDAN KILLIANComedian / Comedy Coach Once upon a time, I worked in an investment bank, lived in a nice apartment, owned an investment property, a trading account and about 100 ties. I quit, and managed to lose all my savings and the property. I came home and decided to become a come- dian, which pays with the sound of laughter. At first, it was really difficult being broke, it hurt my ego so much that I often got defensive with people over very little things. After sometime, I accepted my new position in life and started to really enjoy it. I realised I am not “Aidan, the banker” or even “Aidan, the come- dian,” I am simply Aidan. I now am doing exactly what I want in life and love it. I help people stand on stage for the first time and release their inner funniness… I still have the ties. www.comedycrashcourse.com TOMMy ELLISSmooth Talker In a cafe recently, waiting on food to go. There’s a gorgeous girl in the corner and when I look over, she smiles. When I look again, she pats the seat beside her, so, I go over. She seems like a nice girl, very confident, very forward. She says, “If you take my number, make sure you ring. I’ll be embarrassed if you don’t.” I promise I will, so, the next day, I ring. She doesn’t answer. Time to let it go. So, what do I do to support the little pangs of rejection coming up? I don’t indulge the thoughts. Every time one comes up, I acknowledge it, breath, then I let it off. Eventually, the girl is a memory that has no hurtful content for me to whack my self with. If you know it’s not ok for you, let it pass, it all passes. Over time we get to let go of all of it. www.velvetaudio.ie Spirituality “lettIng go”and the City ISEULT MASTERSONKindergarten Music Teacher In a relationship with someone in my life, when I let go of the de- sire for a particular outcome or relationship definition, it allowed me to open up to what was actually happening in each moment, and became a deeper, far more enriching experience, and one that is full of learning. This just happened as a result of my awa- reness that, by having these thoughts, my insane mind was thin- king it could have some control of the situation! What a waste of time! At other times, letting go has been about giving up the effort to be in charge of my life and trusting my instinct (or just what’s happening) instead. I think spirit is felt as a presence in our lives when we are not blocking it with need or expectation, and the reward we get is that lovely feeling of connection. kindermusicdublin@gmail.com

13 CONOR Ó MEARáINActor You were born in 2000. I saw you first. You were the biggest in the hospital. I saw you grow and begin to marvel at the world around you. I encouraged your curiosity and answered all your why’s, always, until those why’s came full circle. I saw you welcome your sister into the world in 2002. Your huge and generous heart did not know jealousy and you loved her and have always watched over her, like a guardian. Yes, an angel. I nurtured your generosity, encouraged your laughter, tickled your curiosity, taught you respect for yourself and others. And I hadn’t finished. I haven’t finished. But I have had to let go. How does it feel? Well, it doesn’t erase the pain, but it does let in life, love, hope, enthusiasm and so much more. When I was holding on, I couldn’t let anything else in. I was dead to the world, paused in pain. Not anymore. Between dancing, laughing, meditation and time in nature, there are many ways I let go and release emotions. However, these can feel like transient releases and when they are over I can often feel tension returning. At the moment, I am work- ing on letting go of the high standards I set for myself in life. I sometimes get a comical image of myself being a juggler of many balls, each representing different areas in which I strive for perfection. I find the effort this takes to be very tiring. I am practicing being “good enough” and letting go of this “strive for perfection”. The ironic thing is, as I surrender and release my fears of letting go of these expectations, it’ll become easier to keep the balls of life going… Ah, relief. GILLIAN GAVINBiodanza Teacher This year, I let go of a relationship, knowing that holding on would only prolong the inevitable heartbreak from this beautiful guy. Yet, I believe no meetings are acciden- tal. In relationships, sometimes we’re drawn together to heal past wounds in order for maximum opportunity for mutual growth. We were in each others lives to help us see where we most needed healing and in order to help us heal. Things have to come up in order to be released and, sometimes, we can’t do this work on are own. From my experience of releasing and letting him go, I awakened to my truth of Love. He was my greatest teacher. He highlighted to me the healing I needed in order to know and let go of the old wounds which kept me from opening to the deepest, pure Love within me. This break up was my greatest lesson and blessing. www.biodanzagillian.com KATHRyN O’HALLORANMother, Reiki Practitioner, Nurse and the City

By Mary Berkery Please contact me via mary@livingbeauty.ie with any enquires, and for seminars and one to one consultations. We are coming into that time of transition between Summer and Winter, Autumn is here with its dramatic change in deciduous leaves from green to browns, reds and yel- lows. It is the season during which most crops are harvested, the air gets dryer and the light filled days start to shorten. Your skin and body metabolism also changes with this seasonal change. Changes in daily routines keep a harmo- nious balance with the shifting season, main- taining optimum health in this transition. These adjustments deepen our connection to the changing rhythms within ourselves. In traditional medicine, Autumn corresponds to the Metal element. Metal corresponds to the lungs, large intestines and skin. This time is an excellent time to tone and strengthen these organs by giving them more attention. 1 change your sKIn MoIsturIzers Your skin retains less moisture in cooler, drier air. The same happens indoors as the heat goes on and up. Symptoms of “Autumn skin” include dryness, fine lines, dull, sallow skin, sun and age spots, flaking and irritation, as well as some flare-ups. It can remain beau- tiful and glowing if you treat it correctly and make some minor adjustments to your beau- ty regime. There are some excellent certi- fied natural products around that make this easy and are a pleasure to use. Autumn-Win- ter face moisturizers include Dr. Hauschka Rose Day Cream which protects when out- side and Dr Hauschka Quince Day Cream, a fabulous moisturizer helping maintain skin moisture from indoor drying conditions. 2 strengthen lungs To increase lung function, brisk evening walks, consciously breathing and upper chest yoga stretching exercises should be incorporated into exercise routines. To prepare lungs for cooler weather, Dr Shultz Lung Formula is a high quality herbal for- mula that promotes clearer breathing by opening and cleaning up the respiratory passageways, and Dr Vogel’s Ivy-Thyme Complex is an excellent aid in removing congestion. Also, avoid consuming dairy products. They are well-known for conges- ting the lungs and sinuses. Healthy lungs bring more oxygen to all the body’s cells, resulting in a clearer mind, glowing skin and a brighter you. 3 MaKe seasonal dIetary changes Transition from summer fruits to include seaso- nal foods such as orga- nic Leeks, Pumpkins, Sweet Corn, Broccoli, Kale, Cabbage, Carrots, Beets, Blackberries, Pears, Apples and Raspberries, all rich in nutrients. Also, include broccoli sprouts. These are high in a phtytonutrient, sulforaphane, known for its cleansing, detoxifying properties. Broccoli sprouts have the ability to repair damage done to sun-exposed skin. I am an advocate of raw, living, vegan foods and Veronica O Reilly’s book, Raw in a Cold Climate, has some wonderful recipes for this time of year. 4 have a colonIc Colonic therapy greatly helps to detox and cleanse the body of parasites, yeast and many other lingering pathogens. Since Autumn is the time that resonates with the Large Intestine, any colonic series done during this season will have an en- hanced effect, allowing organs to dump toxicity and parasites more readily. It will also provide more hydration more directly to dry skin and lungs. According to Niamh Fitzgerald, Colonic Therapist and Herba- list, having 1-3 colonics at this time of year greatly boosts the immune system, and she has seen marked improvements in general health and appearance. 5 let go Emotionally, Autumn can be a tricky time for some people. It marks the transition of the maximum light of summer to the maximum dark of winter. We begin to lose some of that Spring-Summer solar vitality, making our bodies slower, cooler and more easily overwhelmed. Do as the Large Intestine does: eliminate and let go of grudges, grief, sadness and any other emotions that need releasing. Take time in nature, especially the woods. Allow yourself to let go of the Summer with gratitude for times spent with friends and family. Keep in mind: colonics, acu- puncture or a spa day can help to manually release emotional baggage and can signifi- cantly reduce cases of Autumn depression. Perhaps too, as you let go, make some dedications or wishes that you would like to see more of in your life by Spring. Enjoy this special time of the year. Be well and be your Radiant Self. 14 posItIve beautyLet go with Autumn Care

the good lIfe 2.0 coMMunIty resIlIence In a changIng World Cultivating Leadership 16 Recently, with a group of Irish coaches, trai- ners and facilitators, I have begun an enqui- ry into what it means to be a leader in these challenging times and what the attributes of an effective Change Maker might be. What does leadership mean? It is generally understood to be a process whereby an indi- vidual influences a group to achieve a com- mon goal. If you were to ask most people if they consider themselves a leader, you will probably find that very few do. Most people are uncomfortable with the term and think leaders are people born with extraordinary abilities or are people in positions of power who “tell people what to do.” This concept of the leader as the saviour, the commander or the person at the top of the hierarchy is dominant. Although top-down leadership has its place and the conventional ‘there- can-only-be-one-boss’ style works well is some circumstances, we need to cultivate a different kind of leadership. In a natural system, change never happens as a result of top-down instruction. Leadership is fluid and can come from any direction. So, can you lead without being in charge? The leadership I want to explore here has nothing to do with position or authority; it is about influence and responsibility, it’s about leadership from below or from within. I want to equate leadership not with being in charge but rather with the ability to inspire initiative and new thinking in those around us. At the core of this approach is the capa- city to navigate new paths, build teams and broker between different points of view. This style of leadership obviously plays a significant role in community resilience. As a key aspect of resilience is the ability to self-organise, a leader in this bottom-up context needs to help people move away from a culture of dependency and become leaders themselves. By Davie Philip “a true leader Is not the one WIth the Most folloWers, but one Who creates the Most leaders.” Neale DoNalD Walsch

1 aWareness First of all, know yourself. Generally people who undertake a journey of personal un- derstanding and development will be better Change Makers and have the ability to trans- form not only their own capabilities but also those of their communities. Be observant of limits, both ecological and our own. 2 personal resIlIence Our ability to cope and adapt to the major challenges we face as individuals and col- lectively will depend on our own level of resilience. Good health and inner resolve will ensure we are able to stay calm and be effective in difficult times. 3 passIon Respond to every situation with creativity and passion. Live your values and lead by example. Passion and enthusiasm embed- ded in action rather than in words will go a lot further to inspire others. Be authentic, it’s about who you are, not what you say. As Gandhi declared, “Be the change you want to see in the world.” 4 optIMIsM Even in the face of adversity, leaders must remain optimistic. In the times ahead there is likely to be a lot of fear and pessimism, but to facilitate change and bring others with you, the challenge will be to stay opti- mistic and confident. 5 vIsIon The ability to kindle a shared vision or a common purpose is vital. Leaders are able to help a group articulate a vision and help them take the first steps to achieve it. Al- though it sounds like a contradiction, the vi- sion should be clear but also fuzzy. It needs to have a clear enough focus to motivate action, as people do not function well in unclear situations, but fuzzy enough to be rethought and adjusted on the journey. 6 fleXIbIlIty Good leaders don’t fall apart when adversity surfaces, they flow and have the ability to change and adapt continually. Your adapta- bility and flexibility will demonstrate that you can act in a way that facilitates change. 7 a helIcopter vIeW We live in a complex living system so we have to be able to see systems at work. Em- bracing complexity or taking a bigger pic- ture view is essential. Being able to take a whole system perspective is of the highest importance in this form of leadership and understanding our human systems through the lens of living systems is fundamental. Taking an integral perspective on our com- plex challenges is also crucial. Ken Wilber’s four quadrants development model, which, simply put, shows that any phenomenon can be characterised by its internal and ex- ternal, as well as its individual and collective aspects, is at the heart of this perspective. 8 perseverance Keep going, take risks, do things dif- ferently and don’t be content with the status quo. Stick to your guns and be de- termined to do what you set out to do. A playful approach can help to keep us open and supports resolve. 9 InItIatIve Don’t be afraid to take the initiative and engage others in the quest of building com- munity resilience. Understanding the past, the realities of the present and the likely consequence of an action in the future can help us do this. 10 assocIatIon It is important that a leader-from-within can work with people, and having good communication and listening skills are es- sential. Leadership emerges through rela- tionships. We need to focus on building as- sociation with others and building trust. In these times, it is vital that we break out of our specialist silos of interest and establish partnerships with other groups that are pur- suing similar outcomes. So to conclude, leadership to build resi- lience is not based on hierarchical princi- ples, this subtle form can involve anybody. New leaders will need to possess the capa- city to anticipate risks, be able to persuade others to take action in the face of turbulent change and help create the conditions for people to self-organise. We are unlikely to meet the future effectively with existing perspectives. As Albert Einstein famously said, “No problem can be solved from the same level of consciousness that created it.” The journey to resilience will be a challenging one; it is now crucial that we experiment with new forms of organising and leadership. New capacities are required - ones that catalyse new thinking and assist in communicating a new reality to people in ways that they understand. Leadership isn’t a solo venture; we change things together. Leaders are effective Chan- ge Agents and rarely do things alone, they work with others to get things done. A leader in a community will mobilise, encourage, connect and support people to take action and make a collective difference. This kind of leadership is about creating trust and lis- tening to the needs of the community. Good leaders are made, not born, which means that we can all develop our ability to be better at leading. The fact is that everyo- ne has the potential to be a leader. Anyone who is playing a part in making positive change happen is exhibiting the qualities of leadership. In these challenging times, what might the qualities of this kind of leadership be? Here are ten attributes that I think are important: Davie Philip runs the Community Resilience programme at Cultivate, is a resident in the Cloughjordan Ecovillage and is the coordinator of the Irish Transition Towns Network. davie@cultivate.ie “good leaders are Made, not born, WhIch Means that We can all develop our abIlIty to be better at leadIng”

I asked several people this question recent- ly and received some interesting answers. A teacher in London said it meant being able to say “No.” For a Dublin-based leadership facilitator, it was about being able to make new choices in everyday situations. For an executive coach, it was about intuitive de- cision-making and trusting his gut instincts. For those who had been diminished by po- verty or hardship, it was to do with getting their dignity back. Most interesting of all were those who were in some kind of crisis and were just plain annoyed by the ques- tion. “Empowerment? I’m far too busy trying to make ends meet. I don’t have time for that stuff.” They didn’t equate empowerment with being able to make their lives easier or ge- nerate an income; they saw it as something frivolous, extraneous— something for people with lots of time and money on their hands ...and, even then, they’d probably prefer to have a drink with their friends and bemoan the sorry state of the world. Personal empowerment is rarely what most people think it is—if they think about it at all. It’s not about navel-gazing or going on a retreat to ‘find yourself’. And it’s not some esoteric, marginalised kind of living for skin- ny people who wear leather flip flops and tie-dyed smocks and are devoutly vegan. True personal empowerment is about being truly, authentically, daringly, expres- sively you—regardless of possible criticism or rejection. It’s about discovering parts of you—and mastering certain key princi- ples—that you don’t even know exist. It’s about tapping into your innate ability to transform your circumstances and create more ease, love, money, success and fulfil- ment than you could ever have generated through sheer hard work or diligent plan- ning (not to mention complaining). A key ingredient is self-responsibility— committing to figuring out how you really tick, why your world is the way it is and what you can constructively, powerfully do about it. It’s about taking charge of your own life instead of hoping the government or someone else will fix things for you. Here are some tips and principles to help you get a sense of what’s possible: 1 Changing your life means changing any negative beliefs you have about yourself (and we’ve all been programmed to believe that we don’t deserve lots of love, money, success or fulfilment). 2 Your beliefs create situations and chal- lenges designed to give you a chance to dis- cover who you really are. Every challenge is a call to empowerment and an opportunity to practise greater self-acceptance, self- respect and honest self-expression. 3 Your circumstances are just a reflection of the deeper issues in you that are asking to be addressed so you can have the suc- cess and fulfilment you want. When you ‘decode’ your circumstances, you begin to see why your life is the way it is and what to do about it. 4 By DOING and SAYING things that demonstrate strong self-worth (regardless of how we actually FEEL about our value, importance or lovability), we become mag- nets for all the good stuff. 5 We only ever distort ourselves, com- promise or sell ourselves short because we’re afraid of rejection. Imagine how you’d operate if you didn’t have that fear. We can achieve far more by doing far less if we’re willing to dip our toes in the vast sea of possibilities that emerge when we decide to embrace our own power. What would your life look like if you did that? Would you still be in the same job, house, relationship or country? One thing is certain: you’d feel differently about you and you’d never look at life the same way again. This Autumn, commit to empowering yourself. Difficult circumstances are not designed to change you; they’re designed for you to change them—and to discover just how powerful you can be. The Irish Lifecoach Institute (ILI) was formed in 2003 by Adrian Mitchell and myself who had already been training coaches in Ireland since 2001. We have always been passionate about creating unique and powerful coaching and personal development programmes and workshops that would not just be of the highest quality but that would also be transformational for participants. Previous to his training as a coach, Adrian worked as an accredited counsellor where he helped people from many backgrounds to deal with their difficult life situations. During this time, he developed unique workshops and programmes specifically designed to empower his clients and was also invited to give regular talks and seminars based on his work to interested groups. As a career guidance counsellor, I worked with people from all backgrounds, including prisons, the unemployed, the corporate and SME sectors and the general public. As this work progressed, my focus broadened beyond simply career issues and, to address this, I decided to train as a Lifecoach. I wanted to work with groups and individuals in a positive and pro-active manner. Having always been passionate about personal development, I felt coaching was a natural fit for such work and I have found it to be very rewarding and personally challenging. I feel that a good coach is one who is seen to practice what they say they believe in. It is easy to pay lip service to ideals and spiritual practices but it’s our actions that tell others who we truly are. A good coach makes a personal commitment to their own self-development. Part of this lifelong process involves working with others to maximise their own self- development. I have always believed in the importance of people following their heart in whatever they do in life. Let passion be your guide. The heart is never wrong and to coach from the heart is key to powerful and effective coaching. From the beginning, we set about creating a unique course based on our own coaching work and on our particular interest in human development which we both had researched for many years. By 2003, we had already created our own coaching model, awareness model and change management model, all of which became the framework from which our course was built around. To be an effective coach you need to be honest, real and present with yourself and those around you. It’s important not to fall into the trap of telling and advising clients what to do as that is a cop out and the antithesis to true coaching. By being fully present when coaching another person, I suspend all judgement, all analysis and opinion forming, enabling the client to gain a deeper and more comprehensive experience and knowledge of themselves. What coaching has given me is the opportunity and space to be as present and open-hearted as I can possibly be, and the more I get to do this the more I can remain heart-centred in my life as a whole. Coaching, which Adrian describes as “applied common sense”, helps people to live their lives, run their businesses and do their jobs more effectively with greater rewards and much better results. More importantly, it promotes and encourages personal responsibility in all things, thus bringing huge unexpected empowerment to people’s lives. When people know that they are fully in charge of their lives and fully responsible for how they are living their lives, they become empowered as they no longer need to be “victims of circumstance” and feel powerless as a result. We are passionate about our coaching course because it provides the space and opportunity for participants to not just get a professional qualification in coaching, but to understand and experience themselves on more meaningful and compassionate levels, which can allow for significant personal transformation. posItIve busInessCoaching the Irish The coaching courses run twice a year, beginning in October and again in February. Founded by Ann Maria Dunne it has served seekers of all traditions, backgrounds and interests down through the years. In providing a meeting place for like-minded people, Chrysalis has offered sanctuary and renewal and encouraged wellness of mind, body and spirit. It has exten- ded an invitation to its guests to take quality time out for refl ec- tion and to refocus on what’s important in their lives through their participation in its diverse programme of workshops and retreats. If asked why we do what we do, it’s for the pure joy of witnes- sing transformation at work. We do our best to offer you the riches of potential. The jewels of inner freedom, spiritual exploration, connection with others, stillness and fun! Sure, we could sing our praises about the quality of workshops (high), the food (seconds please) and the gardens (heaven!) but there’s a spirit at and around Chrysalis which we have no words for; a simple one which sends out a beam that shines a clear light of positive intention into a sometimes confusing world. People come here for lots of reasons whether its to learn a skill like vegetarian cooking or dowsing, space clearing, dream analysis or creative writing. Perhaps its simply to experience the benefi ts and wellbeing of relaxation, and appreciate the simple things in life. Others come to explore practises like non-violent communication, dance, movement and breathwork. We like to think that in a spirit of co- operation and service, we can help make a difference in people’s lives and make our contribution to the ever-evolving growth of consciousness on the planet at this time. Even as a child I was curious, questioning and challenging but somehow even then I was manifes- ting many of my experien- ces. I still have a school project, from when I was 13 years old, detailing how I was going to be a Garda and an Air Hostess, two careers which I subsequently enjoyed. As a result of personal trauma, due to experiencing four mis- carriages, I discovered deep energy healing in Reiki/Seichem, which helped me to release the grief and loss which was trapped in my body. The healing was immense and elevated my Spirit to greater needs and desires, which eventually led me to The Chopra Centre in America, where I became a yoga instructor in The Seven Spiritual Laws of Yoga and a Primordial Sound Media- tion instructor, aged 45 years. I feel humbled and excited to learn this ancient wisdom, to incorporate it into my life and hopefully reach others with this ‘Forgotten knowledge’. The Indigo centre was created in November 2009 and is growing all the time. 24 By Patrick Bridgeman Beliefs come in all shapes and sizes, just like people. In fact, it is our beliefs that shape us, literally. Scientific research into the field of Epi- genetics shows that our mind controls our body; more specifically, our beliefs about the world and our self in the world have a direct effect upon our genetic make-up. For example, believing that the world is a stressful place causes stress hormones to flood your body which redirects the blood flow normally destined for the conscious, creative forebrain to the primal, reactive hindbrain. Your blood also shifts away from your immune system and vital organs and heads to your arms and legs for use in ‘fight or flight’ mode. Simply put, stress makes you less intelligent and more prone to disease. To bring you a little deeper into this understanding, any idea that becomes a belief causes your cells to develop in a way that is more receptive to certain che- mical signals than to others. Taking the previous example into consideration, your cells would develop more receptors for stress hormones, leaving less entry points available for healthier chemical signals to gain access to (and influence the program- ming of) your body’s basic building blocks. Can you imagine how different two people would look if one grew up stressed out while the other believed the world to be a safe place full of good friends and happy families? Over time, your whole body would change according to this pro- gramming, inside and out; and all of this programming begins before you have any conscious control over what you would like to believe, before you are even born. It’s nature’s head start, programming you for your mother’s world while you are still being formed in her womb. Her interaction with the outside world is based on her beliefs about the outside world, and the chemical signals these beliefs and interactions send around her body become imprinted upon your own genetic blueprint. That way, when you’re born, you are better ‘prepared’ for the world you are being born into. Believe It or Not

“for those Who greW up belIevIng the forMer, thIs neW Idea May taKe soMe tIMe to get used to, lIKe the shIft that occurred When people Were told that the World Was, In fact, round and not flat.” At a recent presentation by Bruce Lipton, author of The Biology of Belief, I met a woman who has started up a Prenatal Psychothe- rapy practice after realising how important these formative months are on the rest of our lives. Looking back on my own life, I see a correlation between what my mother told me about her experiences at that time and what I then came to believe about my own relationship with women; a belief that manifested a painful pattern in my roman- tic relationships until I finally learned how to reprogram it. My conscious mind was saying, “I only want to love and be loved,” but my sub- conscious mind was telling the universe, “I hurt the women I love and they leave me.” When I first found this out, it was a revela- tion. Finally the pattern made sense, and I thought that since I had become aware of it, it wouldn’t happen again, but that wasn’t the case. I have only recently realised that being made aware is not enough, we need to change our subconscious habits and beliefs if we really want life to stay changed. Habits of thought or action are formed through repetition. Every time you think, feel or do something, electrical signals are sent from one part of your brain to another. When a signal travels along the same path often enough, that path becomes hardwired in your brain. The general consensus is that if you do a task everyday for 30 days it will become habitual, which means that you are likely to keep doing it from then on without having to consciously think about it. Our initial programming continues up until the age of 7 when your personality blueprint and sense of identity are firmly established. After that, your conscious mind becomes creative, but it can only play within the confines of your subconscious beliefs. The subconscious is at least 95% of our mind. It’s the part that really controls the world we manifest, both inside and out- side of our ‘physical’ body. Scientists used to believe that we are purely physical beings living in a mechani- cal universe, but quantum physicists now believe that we are actually energetic beings having physical experiences. For those who grew up believing the former, this new idea may take some time to get used to, like the shift that occurred when people were told that the world was, in fact, round and not flat. Understanding the scientific evidence that mind controls matter and that we are fundamentally energetic beings in an energetic universe, it is easy to see how our beliefs affect our external environment; both on a social, psychological level (e.g. Religion) and also on a physical, material level (e.g. Faith Healing). Your assumptions about situations, and the repeating patterns of experience in your life, show you what’s really going on with your beliefs. When you become aware of how your subconscious sees the world and how it relates to your behaviour towards others, towards the planet and towards life itself, you can decide which (if any) of your beliefs you’d like to change. Some people are not consciously ready to alter their beliefs, but a change might do you good. That is if you have ever won- dered how you could possibly still struggle with money or relationships after all of the amazing insights you’ve had into the nature of the universe. I mean, shouldn’t you sim- ply be able to ask for what you desire and have it arrive on your doorstep the very next day? We are creatures of habit, and while we do learn many new and exciting ways of interacting with the world while travelling along our spiritual journey, unless we use these new ideas to create better habits, our life will keep going back to the status quo of our subconscious reality. Luckily, I have come across some amaz- ing new techniques for doing just that which don’t involve years of psychotherapy or counselling. Techniques such as Non Personal Awareness, which helps us to stop identifying with experiences - which is what causes us to hold things in or hold things out instead of letting life and life- force flow through us as it’s supposed to. We build our identity by holding onto cer- tain ideas. Then, once our identity is estab- lished, other ideas which do not fit with our current collection simply pass on by. Realising this, we can consciously choose to release old ideas that no longer serve us and embrace new ideas that serve us well. In his book, The Spontaneous Healing of Belief, Gregg Braden says, “Belief is defined as the certainty that comes from accepting what we think is true in our minds, coupled with what we feel is true in our hearts.” If any of what I have just shared with you rings true in either your head or your heart, I hope it helps you along your life path. From my own experience, I believe that it will. For a huge list of related resources, visit www.brucelipton.com. For more info on Prenatal Psychotherapy, visit www.holistic.ie/amethyst. NPA “Live” Event, Dublin, October 16th. NPADublin.eventbrite.com www.NonPersonalAwareness.com26 We’ve done really well. We’ve travel- led to the darkest corners of human consciousness. We’ve cleared, cleaned, unblocked, released, understood, dug deeper; inquiring with persistence and commitment. We have stilled our minds, addressed painful belief after painful belief and focused our thinking. We have become emotionally intelligent and hea- led much of our personal history. We have laboured hard, digging a tunnel from where we were to where we longed to be. When we began, all we had were our bare hands and raw desire. Over time, hands have given way to spades and then diggers. We have done really well – in fact, in case you hadn’t noticed, the tunnel is dug! Welcome to the new paradigm! All this pioneering ‘light working’ has faci- litated a huge shift in human consciousness. It may be hard to admit, but many of the traditional awakening approaches that served so well to facilitate that shift are no longer as appropriate. Once a tun- nel is complete, a JCB is a relatively slow, uncomfortable and cumbersome way to go through it. Since the shift, we have been calling for transformational approaches that reflect the new energy. We wanted a new vehicle that could take us through the tunnel quickly and comfortably. A vehicle that would allow us the space, time and energy to explore the exciting possibilities that lay at the other end! Having worked closely with some top names in the human consciousness field, and having spent 13 years in service to teaching and practicing their life’s work, in January 2007 a prayer came through me something like this: “Hey God, thanks for all the amazing opportunities thus far, and is there anything that you would like to offer the world throu- gh me specifically? Just let me know.” Within a week, the NPA process literally ‘popped’ out of me. It seemed ridiculously simple; just a few graduated statements. NPA (which stands for Non-Personal Awa- reness) is a child of the new paradigm. It’s a simple, 6 line, spoken word process that gracefully and powerfully threads into your consciousness the awareness of the energe- tic nature of what you are focused on, and the realisation that it is not personal. The NPA process works beyond the subjective experience of the ‘personality matrix’ (mind, beliefs & emotion) and goes straight to ‘The Field’. It’s very quick, and is busting many modern ideas of what is required to shift consciousness. People say, “The most difficult thing about practicing NPA is letting it be this easy!” They say, “It doesn’t make sense – how can it be this easy? Shouldn’t I have to feel more, understand more or consciously participate in changing my belief systems?” And I tell them that consciousness itself has shifted and the world is inevitably changing to reflect that. 3½ years after its birth, having been expe- rienced by people in over 14 countries, NPA has consistently facilitated phenomenal shifts. For instance: 18 years of depression gone in minutes, pain-free childbirth, ama- zing weight loss, a 2 year old sees her skin disease disappear in 5 days, a man finally lets love into his heart. What a privilege to be part of these rapid and Grace-full exam- ples of human transformation! We share it for free, via talks and our website, and we support its growth and spread through paid-for seminars where we teach people how to use it really well and help them fully ‘embody’ the new energy. What I keep hearing from the people who make full use of NPA in their lives is: ‘Everything’s just falling into place.’ It’s an effortless path, strewn with turbulence-free transformations and quiet miracles. And ‘my’ prayer, it turns out, was not personal either. Rather, it was a prayer from the heart of human consciousness. The fact that you’re reading this, tells me that NPA in some way is an answer to your prayer. It seems that the Universe has delivered your shiny new vehicle and there’s a brave new world to explore. If you’re ready, hop in and take a ride. The only thing you need to ask is, “Am I ready to let it be this easy?” Non-PersonalAwareness beyond belIefs – are you ready to rIde WIth the neW KId on the conscIousness blocK? No life is without its difficulties and strug- gles, but we often forget this, seeing our difficulties and imperfections as our own personal failures. We strive for perfection and we strive for ease, but then feel like even greater failures for not achieving the- se states. However, there is another way of approaching ourselves and our experience, a gentler and kinder approach that accepts imperfection as part of the human condition and points the way through difficulties and struggles. Mindfulness, usually defined as ‘moment by moment non-judgemental awa- reness’, is a way of being that enables us to re-inhabit our bodies, minds and hearts, and brings us home to ourselves. I have found that when I try to describe what Mindfulness is and how it enhances people’s lives, I talk about it either as a very pragmatic set of skills and techniques or as a spiritual practice that transforms our way of seeing and being. I’ve come to realise that Mindfulness is both of these things, and that each person’s individual experience, history and character shapes how they engage with Mindfulness and what they get from it. What is without doubt, however, is the profound impact that Mindfulness can have on those who bring it into their lives. I teach Mindfulness courses, in groups and on an individual basis, as well as shorter courses and workshops. Through learning the skills of Mindfulness, people find that they are less judgemental of themselves, more accepting of themselves and others, less overwhelmed by difficult circumstances and more appreciative of the good things in their lives. One of the key concepts covered on the Mindfulness course is the distinction between suffering we can change and suf- fering that we are unable to change. Our habitual tendency is to react to suffering, to do whatever we can to avoid it. While this is perfectly sensible in relation to suffering that can be avoided (e.g. we avoid going too close to a fire), it is less helpful in relation to suffering that cannot be avoided (e.g. being stuck in traffic). Mindfulness allows you to distinguish between Primary Suffering, what you can’t change (stuck in traffic) and Secondary Suffering, what you can change (how you react to being stuck in traffic). So, practising Mindfulness won’t get the traffic moving but it can help you to reduce or even let go of those difficult reactions. Similarly, if we have a long-term health condition, such as chronic pain, M.E., M.S., migraines or arthritis, we often end up developing tension, anxiety, depression or insomnia. While these are perfectly normal reactions to difficult circumstances, ultima- tely, they are not helpful. Being more aware of our experience, in a kind and non-judge- mental way, allows us to distinguish between Primary Suffering (the health condition) and Secondary Suffering (e.g. the stress arising from worrying about it). Once we can make that distinction, we can choose how to res- pond to the condition, rather than reacting to it in a habitual and unthinking manner. Kindness is an aspect of Mindfulness that is often underplayed, but is crucial in enabling us to develop awareness of ourselves, especially if things are difficult. Most of us are hard on ourselves, setting very high expectations of ourselves or trying to live up to the expectations we think that others have of us. If our lives aren’t going the way we think they should, we blame ourselves. But being hard on ourselves doesn’t help – in fact, it usually just makes things worse! If we develop the ability to soften towards ourselves and others, to bring kindness to bear on difficulties, our experience becomes a lot more bearable and we’re able to look beyond the negative to embrace the posi- tive. Ultimately, kindness, combined with awareness, brings equanimity: the ability to be with whatever life throws at us, to fully appreciate and enjoy life’s pleasures and joys and not to be overwhelmed by its unpleasant and painful aspects. Mindfulness teaches us, quite simply, to be truly alive, no matter what our circums- tances, to see ourselves as part of life, not separate from it. All it takes is breathing in the moment and allowing ourselves to be however we are. As Thich Nhat Hanh, Vietnamese monk and esteemed teacher of Mindfulness writes: “Because you are alive, everything is possible.” Email: info@breathworks.ie www.breathworks.ie Tel: 0876834717 29 “beIng hard on ourselves doesn’t help – In fact, It usually just MaKes thIngs Worse.” Living Well, Living Mindfully By Fidelma Farley

30 Don Sebastian Succle Apaza stood at the top of Grafton Street, surveying the shop- pers advancing toward him. His face was still, but his small dark brown eyes moved from stranger to stranger with the same piercing assessment I had seen him use when checking on the welfare of his lla- mas and alpacas on the slopes of Andean mountains. “Their pockets are full, but their hearts are not,” he whispered sadly. Here was a Q’ero Indian paco (Shaman) who wanted, as a personal treat, to see the bustling energy of Dublin’s city centre. I wondered if he now regretted his choice of treat. For indigenous wis- dom keepers like Don Sebas- tian, it is a major conundrum coming to terms with “the medicine of the fi rst world.” How could all they see, the technology, engineering, academia, artistry, material wealth, political and religious traditions which have all been visited upon many countries with dramatic results, come with such emptiness? The sadness in Don Sebastian’s eyes came from his witnessing that these handsome people walking briskly towards another purchase on a chi-chi Dublin street had in some way been conspiring against themselves. In all the miles walked and hours in ritual with Irish, North American, South Ame- rican, African and Australian indigenous healers I and my wife Karen have expe- rienced, not one was remotely interested in offering a higher spiritual path. What they were very interested in, as were we, was in sharing and getting connected to our hearts by going within and beyond ourselves, to the living energy vibrations of the mountains, the trees, the seas and the stars. Every mile walked, every ceremony, was infused with satisfying our innate hun- ger to feel connected more and more to the pulse of life coursing through our bodies and through the natural world around us. Inevitably, experiencing this pulse as sacred becomes an affi rmation of our Pre- Celtic Irish Ancestors’ perception that there is no difference between our hearts and our souls. To feel, feed and heal your heart is to know the experience of being of soul, of spirit. And to do that optimally, what is required is less about knowledge, but more about courageous wisdom. When Karen and I assist people with various physical and psycho-emotional issues in our clinics, we do so from the spi- ritual place the client is currently in. Yet, we often hear from a client, “but I’m not very spiritual” or “I don’t follow a particu- lar religion”. Well, from indigenous eyes, the atheist, the agnostic and the pope are all on spiritual paths. Life and a spiritual journey cannot be separated, for we all have an investment in fi lling our hearts in some way. We all want to feel more alive today than we did yesterday. And, indeed, there are a multitude of ways, some inju- rious, some sustainable and healthy, to raise that pulse of life and open portals of connection. To the shaman, all those ways are, by nature, spiritual, there are simply degrees of wisdom at work in our choices. And to raise that wisdom, the eternal teaching through the ages beckons us to deve- lop awareness and mastery of one thing: Energy. Our potential for tasting life as divine is tied to a pulsating heart fed by the healthiest units of energy. When we choose to recover our native self and retrieve the indigenous Man/ Woman within us, we activate an ancient memory of our sacred belonging in the world; understanding of energy comes more fl uently, as does the opportunity for seeing the wisest use of it. We become more grounded within and search less for things outside of ourselves to fi ll the hunger in our hearts. Whether you like the land of your birth or not, whether you are a home bird or an immigrant, taking the journey to “go native” is a powerful way to deepen the spiritual journey you have always been on. So, how have you been healing and feeding your heart? If you’re not content, you may not have to change, but your wisdom might. And to help that along... go native and come home to yourself. Going Native folloW the scent of What Is sacred, naturally and WIsely. Since 1997, I have learned about, and subsequently trained in, one of the most powerful healing modalities I have ever come across: Dr Klinghardt’s Autonomic Response Testing (ART). His healing mo- dality is a wonderful coming together of many medical practices, complementary therapies and common sense. This com- prehensive diagnostic and treatment mo- dality finds the underlying causes behind the symptoms of degenerative disease, and helps to unlock the body’s inner hea- ling potential. Do you have unexplained aches and pains? Is your energy level below par? Were you told that even though you feel sick, the medical profession cannot find anything wrong with you? Autonomic Response Testing can determine imbalances in the different levels of the body, their root cau- ses and the correct therapy modality and intervention appropriate to that level. The human body is constantly busy, even in sleep. All activity is being monitored, controlled and organized by an intelligent, bioelectric force called Life. Life circulates in our bodies by way of the Autonomic Nervous System (ANS). The ANS is in direct contact with every cell, muscle and tissue, and it knows exactly what is hap- pening inside our bodies at all times. It is our functional nervous system. To make this easy to understand, the ANS has two parts: the parasympathetic nervous system and the sympathetic nervous sys- tem, or Yin and Yang. Generally speaking, if your body were a car, the sympathetic nervous system acts as the accelerator, or speeds things up, and the parasympathetic nervous system acts as the brakes, or slows things down. Normal, healthy people have a normal, healthy functioning ANS. Their inner doc- tor is able to respond to any type of challenge we encounter. Sick people do not have a normal functioning ANS to varying degrees. This is called autonomic dysregulation. blocKed regulatIon Is the Most overlooKed factor In our quest to becoMe healthy. Healthy people can regulate between ha- ving the brakes on (parasympathetic do- minance) and having the accelerator on (sympathetic dominance). Sick people can’t; they seem to be stuck with either the brakes or the accelerator on. This is called blocked regulation. When your body is in a state of blocked regulation, most of the intelligent bioelectric energy called Life is being used to do something in the body: clean, fix, detoxify, balance, etc. When you have a blocked regulation, all of your ener- gy is spent to hold together a system that is out of balance. There is simply no surplus energy available to heal. Autonomic Response Testing reveals where the ANS is blocked, why, and finds the correct intervention that needs to be applied to create balance. Why conventIonal MedIcIne Is no longer adequate When It coMes to treatIng chronIc Illness. Because the importance of a healthy autonomic nervous system is not taught in medical school, conventional medicine does not recognise and understand its vital role in self-healing. Often, modern day dis- ease is expressed by a multitude of vague, difficult-to-describe symptoms which makes proper diagnosis difficult using only conventional means. The 7 most common factors for blocked regulation are: Heavy metal burden1. Toxic chemicals and Agricultural pes-2. ticides and solvents Food allergies and sensitivities3. Infections (parasites, worms, fungi, 4. moulds, bacteria, viruses) Dental stress, non vital teeth and jaw 5. dysfunction Unresolved emotional stress6. Conflict radiation (WIFI, mobile pho-7. nes, pylons etc) good health faIls, only because the self-regulatIng healIng actIon of the body Is IMpaIred. There is a hierarchy of factors that underlie most chronic degenerative diseases: the 7 Factors that reduce our capacity to elimi- nate toxins. The toxic burden gives a wide range of symptoms and stands in the way of diagnosing a specific disease. At the ISHSKO centre, Autonomic Res- ponse Testing stands paramount, and it is our purpose to create a treatment protocol that educates and encourages the patient to have an active role in the multiple aspects of their optimum health and wellbeing. The protocol will encompass contami- nation prevention and detoxification treatment, stress reduction, healthy eating habits and the value of nutrition in maintai- ning health, as well as achievable, healthier lifestyle choices. I met Sabine (who is Dutch) in Australia in 2000, and thereafter moved to Netherlands with her. After a number of years in Nether- lands, we became involved in the mattress business through a friend involved in Hotels. I became intrigued by the use of natural fi - bres in bedding, and the movement towards using chemical-free, eco and sustainable ma- terials. These materials are recommended to anyone suffering from asthma and allergies. They are also recommended to people who have undergone chemotherapy, adapting to the sensitivities of the skin. Combinations of Natural Latex, Coir Fibre, Organic Cotton and Pure New Wool in mattresses was a very Continental European approach and I had never heard of such materials being used in Ireland. We further researched the area and got to know the leading supplier of these components for the European Market. There is a broad range of individuals who seek out these materials, seeing the direct benefi ts that they offer. One group includes those that strive to use environmentally friendly and sustainable materials throu- ghout their homes and lifestyle. Others are those who are seeking clean, healthy and chemical-free materials. They offer full orthopaedic spine support and, as the size and levels of fi rmness within a mattress can be customised, we can now meet the requi- rements of individuals with back problems or sports injuries. After our fi rst daughter, Orla Roos, was born in Holland we decided to move back to Ireland and open up a shop specialising in Natural Fibre mattresses. To simplify, we decided to take on a franchise and eventual- ly set up in my hometown, Galway, towards the end of 2008. Unfortunately, we were very constrained by the franchise and were unable to adapt to the market conditions here. I took the early decision to move away from the franchise and set out on our own. A diffi cult decision, but I believed strongly that if we had full control on how we ran the business, we could be successful. I spent most of that year travelling throughout Europe and the East to source the best suppliers of natural fi bres and equipment that we required so we could set up production ourselves here in Galway. Our aim was to create an Irish brand of natural fi bre bedding, made in Galway, offe- ring a clean, healthy, luxurious and ortho- paedic mattress to the Irish consumer. All our mattresses are bespoke so we can cater to any shape, size and level of depth and fi rmness of mattress. In Jan 2010 (just after our 2nd daughter Emer Zee was born), we opened our new showroom here in Galway under the name Core Homestore, and Core Natural Sleep as our brand of mattresses and bedding. I also had a great desire to work with local people, which we were unable to do under the constraints of the franchise. Now all our hardwood furniture is made locally in Galway using only Irish wood, allowing us to adapt to the wishes and desires of our customers. The covers for our mattresses are also made here in the West, using a small company that do all our stitching. We also offer our showroom to local artists to display their works and so far have had 3 exhibitions this year and ano- ther planned for October. Currently we are a small operation, get- ting great help from family and friends to help us through our start-up phase. We sell through our showroom here in Galway and on our website, offering free nationwide delivery. We have even had a couple of sales to the US as a result of people fi nding us on the internet. We are also looking at the hotel market and testing materials sui- table to the medical sector, i.e. hospitals, nursing homes etc. We are in the process of moving to a bigger facility to cope with greater production requirements and hope to take on a number of staff before the end of the year. We are at the beginning of a great journey and believe strongly that we have a unique and high quality offering for the Irish consumer and have the ability to grow a successful national business. A few years ago, my youngest daughter was suffering from bleeding Eczema. I was alrea- dy aware that she had fairly sensitive skin but it seemed to be getting worse. As an os- teopath and diplomat of applied kinesiology, I found that a lot of people were also coming to me with skin complaints for which they were seeking a therapeutic solution. My daughter’s eczema was becoming quite bad, so I started doing a lot of research to try and find a solution. During my research, I found that a lot of people who suffered from skin complaints were actually very sensitive to a lot of the irritant chemicals commonly found in cosmetics and body care products. This was something that I was also familiar with as I had once suddenly had an itchy, allergic reaction to a shampoo I had previously been using regularly. It turned out that the manufacturer had changed the recipe and I was having an adverse reaction to one of the irritants in the product. After identifying a list of chemicals that are known to cause skin irritation, I was surprised to find that these were commonly found in products that even claimed to be “child friendly” or “for sensitive skin”. Once I realised that it was difficult to buy any body care products that were completely free from irritants, I decided to build on the research I had done and produce my own in the hope I could produce something safe for my dau- ghter’s skin. I initially made my daughter a simple shampoo, conditioner and soap. I was amazed at how little time it took to see an improvement in her skin condition. When I told people of her improvement, many of them expressed interest in the products themselves. We were surprised to find how many people were already concerned by the irritants in the products that they used, there were a lot of people who didn’t want to use a soap that may irritate their baby’s skin or a shampoo that makes their head itch and we found that a lot of these people are frustrated by products that claim to be “organic” yet still contain irritant chemicals. I immediately started making larger batches and increased the variety of products we were making. From there we have grown considerably and now have a complete range of irritant- free shampoos, conditioners, body butters, shower gels, moisturisers, cleansers, lip balms, soaps, hand creams, hand washes and even bath bombs. Although it’s nice that we have become quite popular, it is most rewarding when you see an improvement in somebo- dy’s life. My daughter’s skin has completely cleared up, and many other people have had positive experiences using our products. We visited the Mind Body Spirit exhibi- tion in Dublin earlier this year where we were inviting people to try some of our pro- ducts. Across the weekend there were two girls who wouldn’t try our products because they said they had tried so many “natural” products in the past and all of them had given them both an adverse skin reaction. One girl in particular said that she had spent a lot of money trying many expensive skin creams and all of them had brought her out in a rash; she didn’t believe ours would be any different so she initially refused to try them. After some time explaining the ethos behind the products, she reluctantly tried one of our face creams. Two hours later she came back to see us explaining how this was the first cream she had used that didn’t bring her out in a rash. When you speak to people like that and find that you have solved a problem for them or improved their lives in some way, it’s very rewarding. 38 Do you know how much our faces reveal about us? One of the oldest ma- nuscripts about Chinese Medicine ever found had on its first page “the facial map”. The second page was a map of the facial meridians. This original map had 150 age positions on it, meaning that a person could potentially live to be 150 years old! The face is said to be the blueprint of who we are and who we are becoming, all our facial features and lines tell our story, what we have been through and when. It also tells us about our personalities, our strengths and our weaknesses. When life events happen, they mark our faces. Our face is our story. Coco Chanel once said “We get the faces we deserve”. Maybe she was alluding to orien- tal thinking which suggests that if we don’t look after ourselves physically and emotio- nally and eat the foods that are best suited to our constitutions, and spend time in the climate and environment that best suits us, then this can be seen on our faces. In orien- tal thinking, an inappropriate diet, too many toxins or drugs, too much stress and persis- tent negative emotions all affect our internal organs, and if these organs are out of balance it can be seen in our faces. The good news is that when we pursue lifestyles that respect balance, when we nurture ourselves emo- tionally, physically and mentally, our faces, with all their stories, are beautiful. When we express ourselves, lines deve- lop on our faces. When we laugh the wrinkles at the side of the eyes crinkle, when we are sad or disappointed then the corners of the mouth drop. These lines merely indicate the emotion we are experiencing but when these lines are there all the time they indicate that a particular emotion may be habitual, hence laughter lines or frown lines may become more permanent. Amazingly, sometimes when we change habitual emotional responses or release long-held emotions, lines can just disappear or just leave a faint resonance! We can divide the face into 3 areas: top, middle and bottom. The top area is related to mental activity, the middle to practica- lity, and the lower to our emotional and instinctual worlds. The shape and markings on the fore- head are said to be our “inheritance”, the talents, abilities, interests and desires that are innate to us. The middle area relates to our “fertility and creativity”, and the lower area reveals the “overuse of our bodies”. If you run a line down the middle of the face you will see that each side of the face is slightly different. The right side is how you want to be perceived in the world and the left side is the private you, who you really are. 1 the KIdney: Too much hard work, juggling too many commitments, worry, lack of sleep and too much coffee all show in the kidney/ liver area. This is the half moon-shape under the eye. If the area is puffy and blue, you are working too hard and de- pleting the adrenals. Similarly, if the in- ner corner of the eye has a sunken dark blue tinge to it, then it is time to take stock and look at how to live in a less adrenal way. If your ears are redder than the skin on your face it is also a sign to seek balance. Face Reading in Chinese Medicine By Deirdre Courtney (M.A.) Head of Acupuncture Department CNM 38

2 the lIver: If you look under the eyes and there is a dark brown or congested colour then this points to the liver being out of balance. The liver can become stressed and out of balance for seve- ral reasons, these include too much bottled up emotion, unexpressed frustration or an- ger, too many fatty foods (especially foods such as dairy, pork, fried foods) and alcohol. If the liver is very congested (fatty infiltration of the liver) there may be a deep vertical line between the eyebrows. If this is present, the body’s fat metabolism and hormone system may not be working optimally. When there is little fat and alcohol in the diet and when we have a healthy and open expression of emotion then there is very little brown dis- coloration in the face (no liver spots) and we have fewer lines. 3 the heart: This is seen in our eyes. We call this the Shen (spirit). It is the life force that shi- nes from our eyes which shows that we are truly alive. When our shen is good, the eyes are moist and glisten. If, when you look in the mirror, the eyes that look back at you are dull rather than glistening then somewhere you have become disconnec- ted from your heart and need to rediscover what really brings joy into your life. 4 the stoMach and IntestInes: The health of our digestive organs is seen in the lower part of the face, around the mouth and chin. If there are eruptions or spots or if the skin is blotchy around the chin, this may indicate poor intestinal health such as an overgrowth of Candida or too much sugar, yeast or dairy in the diet. If the lower lip is swollen or protruding, the large intestine might be sluggish. If the top lip is cracked or red, there is too much heat in the body. This may indicate too much alcohol, caffeine, spicy foods or excess aci- dity. If there is yellowish discoloration in this area, then the digestive fires might be weak and a better diet with some digestive enzymes may be needed. If there are deep transverse lines running along the middle of the forehead, this also indicates a need to boost our absorption of nutrients. These lines indicate spleen imbalance, one of the major causes of spleen imbalance is a ten- dency to worry. For a smooth forehead we need to let go of worry. Sometimes we meet someone elderly and marvel at how youthful their face appears and what a sparkle they have in their eyes. Invariably, with further discussion, we will find that that person has lived a life where they have come to know what foods and environments suit them the best and keep them in balance, a life where they have known what emotions they need to express to stay in balance and a life where they have followed their heart’s message and hence preserved the shen! If you are interested in training in Complementary medicine, CNM are running open evenings throughout September and October in Dublin, Cork and Galway. as a prevIeW to theIr talKs at the rude health shoW, patrIcK holford and dr gIll hart eXplaIn hoW you can fInd out What foods you are Intolerant to and What can you do about theM If you are. Do you think you may have a food intole- rance? It’s estimated that nearly half of us react to foods in our diet and have to put up with debilitating symptoms such as a lack of energy, mental “fog”, digestive problems, aching joints, eczema and headaches. So how do these intolerances occur, how can you find out what you’re intolerant to and what can you do about it if you are? Intolerance occurs when the body alters its normal immune response in some way, due to the presence of an allergen (a sub- stance which triggers an immune reaction). As the body’s immune system is highly active in the digestive tract, where it acts like the bouncer at the gateway into your body, foods that aren’t digested properly or that irritate or inflame the ‘gate’ mean its highly likely that they’ll be under “arrest” by the immune police. This is, in essence, what most food intolerances or sensitivities are all about. Of course, the real answer to stopping intolerances is to heal the digestive system and don’t eat the particular foods that are stressing or irritating the digestive tract. However, the fact is that if you’ve already developed intolerances you really need to ‘undevelop’ them first by finding out what foods you are currently reacting to and avoiding them long enough to heal the digestive tract, stop the antibodies that are produced from reacting throughout your body from causing your symptoms, and to reprogramme the “immune police”. You will know if you suffer from a full- blown (antibody IgE-mediated) allergy to foods such as nuts and shellfish; strong immediate reactions with severe stomach upset and swelling in the mouth and throat, which can be fatal, are typical of classical allergic reactions. The emerging view is now that most allergies and intolerances, diplomatically called ‘idiosyncratic’ reac- tions by some, are not IgE based. There is a your Hidden Food Intolerances Identified 40 Dr. Gill Hart

new generation of allergy tests designed to detect reactions to foods that measure IgG antibodies. According to Dr James Braly, “Food intolerance is not rare, nor are the effects limited to the air passages, the skin and digestive tract. Most food intolerances are delayed reactions, taking up to three days to show themselves, and are therefore much harder to detect”. There are several possible reasons why a person becomes food intolerant. Among these are a lack of digestive enzymes, “leaky” gut, frequent exposure to foods containing irritant chemicals, immune defi- ciency leading to hypersensitivity of the immune system, micro-organism imbal- ance in the gut, and no doubt many more. There is a lot you can do to protect yourself and reduce your intolerance potential, but where do you start? In the past, testing for intolerances has been notoriously difficult. The traditional exclusion diet, where you cut out any sus- pected foods then slowly reintroduce them one at a time after a month and monitor your reactions, is difficult, very time con- suming, and it is nigh on impossible to determine the exact combination of foods that are triggering your symptoms; the average is five different foods. The fact is that every individual person is unique with a different biochemical make-up, even to others with similar conditions. Thankfully, help is at hand with a simple testing service that identifies food-specific IgG antibody reactions, so you can eas- ily pinpoint the harder to detect “hidden” allergens. The YorkTest FoodScan is the only one food-specific IgG test available that has significant clinical data to support its use. YorkTest has over 25 years of expe- rience in the food intolerance testing mar- ket and has widely published test data to show that, in those with chronic symptoms such as irritable bowel syndrome, eczema and headaches, over 3 out of 4 will show significant benefit if they remove those foods from their diet that have shown a reac- tion. A unique kit is sent to you so you can take your own blood sample at home and post the kit direct to the laboratory for test- ing, without the inconvenience of visiting a hospital or GP. The test only requires a few drops of blood from a finger prick sample, and you are supported through the whole process by a qualified Nutritionist so that you don’t feel like you are attempting this all on your own. “of course, the real ansWer to stoppIng Intolerances Is to heal the dIgestIve systeM and don’t eat the partIcular foods that are stressIng or IrrItatIng the dIgestIve tract. “ on tour Many people are looking to take control of their symptoms using methods that are proven, positive and active. Help is at hand; at the Rude Health Show at the RDS, Dublin on the 11th and 12th September 2010. Dr Gill Hart will explore the science behind food intolerance testing and look at the results that have been achieved. Instead of “life” you can put health, giving this quote a more relevant meaning. Already at birth, some foundation is laid for future health. More important, however, is your li- festyle from childhood into adult life. Your body is like a very sophisticated car. It needs the best possible fuel and maintenance. All cells in your body need building blocks and fuel to reach the fullness of health. Important new research of omega-3 fatty acids in the diet or as a daily supplement clearly demonstrates how one can get a healthy heart and brain. A healthy heart is crucial for optimal health. Without proper heart function, the cells of the body risk a lack of oxygen and essential nutrients. Without proper nutrients and care, your brain will not function in an optimal way. This will typically be experienced as fatigue and a general lack of health. The good news is that there are simple ways to look after your heart and brain. 1 Get a regular, proper and balanced diet combined with some level of physical activity. With lower physical activity you have to more carefully look after what and how much you eat. 2 Make sure you get enough omega-3 fatty acids, preferably from a fish source, and vitamin D in your diet or as an addi- tional daily supplement. During the past 100 years, we have decreased our dietary intake of omega-3 fatty acids by more than 80%. This means that your body may not be getting an opti- mal intake for a healthy heart and brain. trIglycerIdes Elevated triglycerides being a heart risk factor is today a scientifically established fact, but did you know it is more important for women? Omega-3 fats can greatly reduce the unhealthy triglycerides. Several Swedish studies support the fact that natural stable fish oil lowers triglycerides more efficiently or as good as any other medication. The importance of omega-3 for a healthy heart, especially in women, has been fully recognized by the recent recommendations of the American Heart Association. 500mg of omega-3 per day is recommended as a preventive strategy for good heart health. This intake can be increased to 1000mg or more on an individual basis. oMega-3 durIng Menopause The effect of fish oil in menopausal wo- men taking estrogen medication is parti- cularly effective and interesting. Here an additional intake of omega-3 helps give an improved hormonal balance, improved stress resistance and less inflammation. Omega-3 intake will provide more elastic cell membranes which will help to main- tain healthy cells under stress of inflam- mation or imbalance. These benefits will occur in all cells, explaining why the admi- nistration of fish oil has beneficial effects on such diverse organs as the brain, heart, breast, joints, blood vessels and skin. oMega-3 and the braIn You have maybe heard before that eating fish is good for your brain. Many studies show that a sufficient intake of omega-3 is important for a healthy brain. natural and stable fIsh oIl For fish oil to provide a good result, it is important that at least three criteria are met: 1: A fish oil should be free from environ- mental toxins and pollutants. However, in a purification process most of the natural antioxidants from fish oil are lost. This means that the oil is more susceptible to oxidization and to becoming rancid. 2: Fish oil should be restored, after purifi- cation, with a group of natural antioxidants to keep it stable both in the bottle and in the body. Natural, stable fish oil with a restored mixture of natural antioxidants shows an excellent stability when exposed to air for up to 200 days. 3: Fish oil should be as natural as possible. During the concentration processes, valuable fatty acids and antioxidants are lost. A good example of a natural and stable fish oil is Eskimo-3®. The message to take home is that your heart and brain health can dramatically improve with a better lifestyle and use of more omega-3 fatty acids in the diet. Simply, put back what has been missing. hoW do lactIc acId bacterIa WorK? Lactic acid bacteria are a group of related bacteria that produce lactic acid as a result of carbohydrate fermentation. These mi- crobes are broadly used in the production of fermented food products such as yogurt, cheeses and sauerkraut. They are used in preserving and producing food and in the food industry for several reasons. Their growth lowers both the carbohydrate content and the pH of the foods that they ferment due to lactic acid production. It is this acidification process which is one of the most desirable side-effects of their growth. The pH may drop to as low as 4.0, low enough to inhibit the growth of most other micro-organisms including the most common human pathogens, thus allowing these foods prolonged shelf life. The aci- dity also changes the texture of the foods due to precipitation of some proteins, and the biochemical conversions involved in growth enhance the flavour. One of the most fantastic things to know about Lactic Acid Bacteria is they work entirely without electricity, which is pretty important if you want to preserve food without a fridge or freezer. And this is exactly what they do; they preserve flour (ideally freshly hand-milled flour) in the form of bread, shredded cabbage in the form of sauerkraut and fresh milk in the form of quark, cheese or yoghurt. They feast on sugars (lactose, fructose) and create an aci- dic environment where harmful pathogenic bacteria like coli, salmonella and listeria cannot survive. Baking sourdough bread, making Saue- rkraut and fermenting milk for all sorts of cheeses has become an intrinsic part of my family’s producing some of our own food. The use of Lactic Acid Bacteria has become part of our daily lives. Born of both necessity and practicality, lactic acid fermentation proved to be not only an efficient method of preserving food for our ancestors but also a critical one because fermented food like sauerkraut, cheese, wine, soured grain porridge and breads often sustained tribes and villages during harsh winters when fresh food sim- ply wasn’t available, let alone plentiful. Lactic acid bacteria are a diverse group of organisms with a diverse metabolic capa- city. This diversity makes them very adap- table to a range of conditions and is largely responsible for their success in acid food fermentations, e.g. Leuconostoc mesenteroides is a bacterium associated with the saue- rkraut and pickle fermentations. It differs from other lactic acid species in that it can tolerate fairly high concentrations of salt and sugar. Lactic acid fermentation is used in many areas of the world to produce foods that cannot be produced through other methods, e.g. cheeses and yoghurt. Histori- cally, bacteria from the genera Lactobacillus, Leuconostoc, Pediococcus and Streptococcus are the main species involved. Several more have been identified but play a minor role in lactic fermentations. the health benefIts of lactIc acId ferMentatIon Fermented food has many health benefits. The fermentation process can transform the flavour of food from the plain and mundane to a mouth watering sourness enriched by colonies of beneficial bacteria and enhan- ced micronutrients. While fermented food like yogurt and sauerkraut are well-known, virtually every food with a sugar content can benefit from lactic fermentation. My grand- mother used to pickle not only cabbage but beetroot, cauliflower and carrots. In many societies, including our own, where yogurt has been heralded as a health food since the 19th century, fermented food has gained a reputation for its benefi- cial effects on immunity, intestinal health and general well-being. For example, milk that undergoes lactic acid fermentation conveys more vitamins to the eater in comparison to raw milk and, particularly, pasteurized and ultra-high-temperature (UHT) pasteurized milk. Fermented dairy products consistently reveal an increased level of folic acid, which is critical to producing healthy babies, as well as B vitamins and riboflavin. Vegeta- bles, fruits, legumes and grains subjected to lactic acid fermentation often see an increase in the activity of vitamin C and vitamin A and, particularly, lysine with its antiviral effects. Since souring grains reduces the phytic acid content, the lactic acid fermenta- tion process actually enables your body to absorb more minerals from the grain (especially Rye) than you would be able to otherwise absorb. Take advantage of all the health benefits that lactic acid fermentation offers and incorporate fermented food into your diet. Best of all, they are free! posItIve foodThe Wonder of Lactic Acid Bacteria by Hans Wieland www.theorganiccentre.ie 45

spInach, lentIl and chIcKpea curry This aromatic curry is always a favourite at my cookery classes! Add some chilli powder if you like it spicy. The coconut adds a creami- ness without being too rich. If you don’t have the spices to hand then cheat by using the Pataks paste available at most supermarkets. Directions Wash the red lentils in a sieve under a running tap for a minute. In a large pan with a lid, fry the onions in approx 2 tbsp olive oil or coconut oil until soft. Add the mustard seeds or panchipooran and the turmeric, cumin and coriander, then the carrots/cauliflower and sweet potatoes, garlic and ginger. Stir around for a minute and then put the lid on and let the mix- ture sweat on a low heat for a few minutes. Add the lentils and the chickpeas - add the water too, so long as they aren’t in salted water. Add the peas and some more water just covering the vegeta- bles. Simmer with the lid on, stirring occasionally for about 20 minutes, adding more water if it looks dry. The lentils soak up a lot of water. Check the potato and carrots are soft. When everything is cooked and the lentils have absorbed most of the water – they should look mushy and lighter coloured, stir in coconut and let it melt into the curry, then add the spinach and let it wilt into the curry. Add the tamari, salt and pepper. Serve with Cucumber Raita, and Aromatic Brown Basmati Rice, see below. Serves 6 to 8 depending on the portion sizes! aroMatIc broWn basMatI rIce 6 oz organic brown basmati rice 14 fl oz water ½ tsp turmeric, 1 cinnamon stick or 2 inch piece of cinnamon bark from Indian grocers. Directions Wash the rice as for the lentils above. Put in a large saucepan with the spices and water. Bring to the boil and then simmer for 20 to 25 minutes with the lid on. Check occasionally. The rice is cooked when it looks fluffy and most of the water has been absorbed. Pour off any excess water, remove the cinnamon sticks and cardamom pods and serve. cucuMber and yoghurt sauce/raIta Finely chop half a cucumber with the skin on. Mix with 6 tbsp natural yoghurt, 1 small garlic clove crushed and a handful of fresh, finely chopped mint leaves. Season with salt and pepper.
